The elegance of selective fishing
A symbol of French refinement, Navarre blue lobster is caught exclusively using pots. This method is respectful of the seabed.

Navarre blue lobsters are caught in the wild, rich and turbulent waters of the Minquiers archipelago (south of Jersey) to the Écréhous (north-east of Jersey). Crossed by the Gulf Stream, these waters transform the lobsters into true athletes of the sea, powerful and muscular.
The solitary life of the blue lobster
A solitary animal, the blue lobster lives on rocky and sandy-gravelly sea beds. During the day, it hides under rocks or in holes. A nocturnal predator, it feeds on crustaceans, molluscs and small fish. Its slow growth (5 to 7 years to reach 25 cm) contributes to its rarity and irreplaceable flavour.
Conservation: the art of preservation
After harvesting, Navarre blue lobsters are quickly placed in our tanks in Gouville-sur-Mer. Equipped with biological filters and temperature regulators, these tanks preserve the lobsters’ vitality and limit stress. Strict specifications allow us to balance production requirements, product quality and environmental ethics.
