Selected from fine oysters farmed in Gouville-sur-Mer, Fine de Normandie oysters are grown in traditional bags in our oyster beds. The highest tides in Europe and the Gulf Stream ensure unique mixing and a rich supply of phytoplankton and nutrients. This exceptional environment elegantly sculpts the shell and intensifies the flavour.
30 months of care for an iconic oyster
From its arrival as spat to full maturity, the Fine Oyster of Normandy undergoes patient and rigorous refinement. Carefully calibrated and sorted, it is purified according to modern health standards.
