At Odette, one dish that truly represents our cuisine is the Normandy Brown Crab. We’ve been sourcing our brown crabs from our long-time partner, Navarre, who works very closely with fishermen in Normandy and takes great care of their catch from sea to kitchen. It’s a wonderful reflection of what we value most—the people behind the produce and the honest flavours that come from their dedication and craft.

We proudly serve the Navarre L’Antilope 1858 Oysters at both Claudine and La Terrace here in Singapore. These arrive fresh from the coast of Normandy twice a week, and their brinier profile makes them excellent for pairing with bold flavours.
In La Terrace, we pair them with a shio kombu mignonnette, an Asian-inspired twist on the classic, which adds a deep umami savouriness that complements the oyster’s natural character beautifully

Sustainable fishing: the dormant art

Preserving the ocean, respecting resources

Committed and ethical, the Domain Navarre practises exclusively dormant fishing, a traditional fishing method that is deeply respectful of the seabed.

  • Use of lockers suitable (Pimpolais, Conquetois, visiting rooms)
  • Coastal fishing with daily trips (6 to 8 hours at sea)
  • Fresh bait to preserve flavour and reduce stress on shellfish

Unlike drift nets, the crates are placed on the seabed, attached by lines, and raised every two or three days.
