The life of a scallops
A filter-feeding bivalve mollusc, the scallop is distinguished by its ability to swim by clapping its shells together. Feeding mainly on marine phytoplankton, it reaches its ideal age after 24 to 36 months of growth:
- Harvest when the texture and flavour intensity are at their peak.
- Growth shaped by the currents of the English Channel.
- Continuous filtration of plankton, which shapes its pure, salty flavour.
